Ingredients

  • La Finca Corn Tortilla for Taquitos
  • Two potatoes
  • Two tomatoes
  • Two cloves
  • Sugar
  • Salt & pepper
  • Olive oil
  • Shredded Lettuce
  • Chopped onion

Directions

Potatoes filling 

Boil peeled potatoes till soft and smash.  Add salt and pepper to taste

Sweet sauce topping

Boil tomatoes with 2 cloves till soft.  Drain water and put in blender along with cloves and sugar to taste.  The sauce is supposed to be sweet.

Taco Preparation

Warm olive oil in frying pan and then warm corn tortillas in microwave for a few seconds.  Once corn tortillas are warm, add potato filling and seal with a toothpick so the taco won’t open. Dip into frying pan and fry till golden brown; turning the taco on both sides.

Once you have fried a few tacos; arrange on a plate and add toppings. Add shredded lettuce, chopped onions,  cotija cheese and sweet sauce to taste.
